We asked the question in the PC Game Spotlight comments, and the answers are absolutely bonkers. Boss fights mentioned include Ornstein and Smough in Dark Souls, The Boss in Metal Gear Solid: Snake Eater, Psycho Mantis in MGS, and Liquid Ocelot in MGS4.
